Mutton Dum Biryani

How to make Mutton Dum Biryani

Ingredients :

4 cups Basmati Rice,
1/4 tsp mixed with 2 tbsp water Food Colar,
3 cups Onion,
1 bunch (chopped) Cilantro/coriander leaves,
5 nos (slit into lengthwise) Green Chilies,
1 cup Yogurt,
3 nos (chopped) tomatoes
11/2 tbsp Red Chilli Powder,
3/4 cup Oil,
3 Cloves-3, Cinnamon Stick - 1" Bay Leaves -2, Cardamom -2,
3 tbsp Ginger paste,
2 tbsp Garlic paste,
1 kg Mutton,
Soaked Rice (Soak rice for 30 minutes)

Method :


1) Soak the rice and set the timer for 30 minutes.Heat 3/4 cup of oil in a pan . you can use vegetable oil or canola oil.Now add cloves, cinnamon, bay leaves and cardamom.

2)Now add 3 cups of Onion and fry them till it becomes light brown. Now add ginger paste :3 tbsp and Garlic paste :2 tbsp. Fry them all together and stir it for couple of minutes until row smell goes off.

3) Now add the washed mutton into the pan and salt. Make the gravy a little extra salty so after when you mix with the rice it. Will taste right.

4) After that add turmeric powder and red chili powder mix is all together. Add green chilies into it. You can adjust adding green chilies according to your spice level.

5) Mix it all together and sit in the medium heat for couple of minutes. Now add 1 cup of yogurt in to the mixture. Mix it all together.

6) Now add 1/2 bunch of chopped cilantro into it. Add the remaining cilantro when the gravy is thick in consistency.

7) Add a handful of mint leaves into the gravy. This step is totolly optional, I like the flavor of mint in biryani.

8) Finally add the chopped tomatoes into it. Make sure you don't add the tomatoes inltially. In this method always add tomatoes finally.

9) Let the gravy boil in medium heat for about 5-10 minutes. Make sure you mix it every other couple  of minutes. Don't cover it with lid yet. Now add a tsp of ghee(optional) and mix it well. Cover it with lid and let it cook in medium heat for 10-15 minutes. Stir it every other 5 mins.

10) The consistency of gravy should come like this until then cook in medium heat. The gravy should be thick in consistency. Don't add water or pressure cook the gravy, it will change the taste of the biryani.

11) Heat water in a wide vessel until it comes to full boil. Once it boils you will be adding rice. Now add the soaked rice into the boiling  water.And set the timer for 6 minutes. let the rice cook in high heat for at least 6 minutes.

12) Check to see if the rice is cooked about 70%. Make sure the rice isn't fully cooked. You can check it by smushing a few grains b/w your fingers. Now carefully transfer the rice into a strainer. Make sure you don't break the rice.

13) Grease the aluminum pan with butter or ghee. Make sure you grease the bottom and the sides. Mix food color with 2-3 tbsp of rice. This will give nice color to the final biryani.

14) Now layer the rice and gravy into the aluminum pan. Layer it with rice in the bottom and the gravy in the middle. You can also do multiple layers.

15) Now preheat the oven to 350F. Cook it in the oven for 30 minutes. Cover it tightly with aluminum foil. Cook the biryani in the oven for 30 minutes. After 30 mins remove it form the oven. Mix the rice and gravy gently. Here is the delicious Mutton Dum Biryani.

Mutton biryani

How to make mutton Biryani

Ingredients :

800 grams Mutton on bone, cut into cubes,
2 cup Basmati rice, soaked,
12-14 Green cardamoms,
12-15 Cloves,
salt to taste,1 inch Cinnamon,7-8 Garlic cloves,1 inch Ginger, Roughly chopped,
8 tablespoons Clarified butter(ghee),
2 Large onions,sliced,
5 Green chillies,
1 cup Yogurt, whisked,
1 cup milk,
Fresh mint leaves as required,
Fresh coriander leaves as required,
2 tablespoons kewra water,
A few saffron strands

Method :


1) Take 4 cups water in a large microwave safe bowl. add 2 cardamoms, 3 cloves and salt and heat in the microwave for 10 minutes or till the water boils.

2) combine remaining cardamoms, remaining cloves and cinnamon in a morter. Grind them coarsely with a pestle. Discard the cardamom skins and add garlic and ginger. Grind further.

3) Heat 5 tablespoons ghee in a pressure cooker. Add onion and saute till lightly browned.

4) Add rice to the boiled water and heat in the microwave for 12 minutes or till 3/4 done, stirring once after every 2-3 minutes.

5) Add ground masala in cooker, mix and saute for 10-15 seconds. Add mutton, salt and stemmed green chillies. Mix well and sear the mutton on high heat for 5-10 minutes.

6) Add yogurt, mix well and cook further. Add milk and 2-3 cups water and stir to mix. add some mint leaves, some coriander leaves and 1 tablespoon kewra water. Mix well and bring to a boli. Cover and pressure cook on simmer for 2-3 minutes and then on high heat for 15 minutes.

7) Strian the rice in a colander and transfer the rice in another bowl. Add 1 tablespoon ghee, some mint leaves and some coriander leaves. Cover with an aluminium foil and set aside.

8) Transfer cooked mutton in a deep non-stick pan and put on heat. Add saffron, remaining kewra water, some mint leaves, some coriander leaves and mix well. Adjust salt if reqired and bring to a boil.

9) Add rice and spread evenly on the mutton. Reduce heat to low, drizzle remaining ghee on top, cover with aluminium foil and cook on dum for 8-10 minutes.

10) Remove aluminum foil and mix the biryani form the sides. Transfer into a serving dish and serve hot garnished with a coriander spring.

Chapati roti

How to make Chapati roti

Ingredients :

wheat flour
oil, salt

Method :

1) knead flour firstly for making roti.
2) to knead flour  we need half the quantity of water then flour.water usage depends on the veriety of flour been used.
3) Add salt and oil in the flour.
4) mix well.
5) Add little water at a time and knead the flour.For making roti or chapatti knead soft dough.
6) dough is ready.
7) knead it more to make it soft.
8) its very impartant to make dough ferment because only then you will get soft chapatties.
9) keep it aside for half hour so that it gets fermented.We have 2 tsp oil in the dough.This will too make the roti soft.

10) Flour can be kneaded without using oil,But if you need to make soft roti add oil in it.Cover it and it aside for half hour for fermenting.
11) After half hour knead the dough again. rease your hands with oil and knead the dough again.
12) Now  we will start making rotis.Take little amount of dough (lemon size) and make ball.
13) place the ball on rolling plate and press it slightly.With help of rolling pin start rolling it making sure the center doesnt get too thin.
14) Roll it for about 2.5-3 inch and coat it again with dry flour.Now roll it again with 6-7  inch diameter.Try to roll the roti from corners.
15) Roti is kept and thick accordingly in many places. We have rolled the roti.
16) Now place roti on hot tawa.Meanwhile prepare second roti. You can see the surface of roti has got dark color which means the other side is roasted. Trun the roti

upside down.
17) Now roast the other side until you get brown spots on the roti.Roti is roasted from the other side as well.Now we will cook it directly on the gas or flame.
18) roti is ready. With help of tongs rotate the roti gently.Roast it till it gets brown spots like this.
