Mutton Dum Biryani

How to make Mutton Dum Biryani

Ingredients :

4 cups Basmati Rice,
1/4 tsp mixed with 2 tbsp water Food Colar,
3 cups Onion,
1 bunch (chopped) Cilantro/coriander leaves,
5 nos (slit into lengthwise) Green Chilies,
1 cup Yogurt,
3 nos (chopped) tomatoes
11/2 tbsp Red Chilli Powder,
3/4 cup Oil,
3 Cloves-3, Cinnamon Stick - 1" Bay Leaves -2, Cardamom -2,
3 tbsp Ginger paste,
2 tbsp Garlic paste,
1 kg Mutton,
Soaked Rice (Soak rice for 30 minutes)

Method :


1) Soak the rice and set the timer for 30 minutes.Heat 3/4 cup of oil in a pan . you can use vegetable oil or canola oil.Now add cloves, cinnamon, bay leaves and cardamom.

2)Now add 3 cups of Onion and fry them till it becomes light brown. Now add ginger paste :3 tbsp and Garlic paste :2 tbsp. Fry them all together and stir it for couple of minutes until row smell goes off.

3) Now add the washed mutton into the pan and salt. Make the gravy a little extra salty so after when you mix with the rice it. Will taste right.

4) After that add turmeric powder and red chili powder mix is all together. Add green chilies into it. You can adjust adding green chilies according to your spice level.

5) Mix it all together and sit in the medium heat for couple of minutes. Now add 1 cup of yogurt in to the mixture. Mix it all together.

6) Now add 1/2 bunch of chopped cilantro into it. Add the remaining cilantro when the gravy is thick in consistency.

7) Add a handful of mint leaves into the gravy. This step is totolly optional, I like the flavor of mint in biryani.

8) Finally add the chopped tomatoes into it. Make sure you don't add the tomatoes inltially. In this method always add tomatoes finally.

9) Let the gravy boil in medium heat for about 5-10 minutes. Make sure you mix it every other couple  of minutes. Don't cover it with lid yet. Now add a tsp of ghee(optional) and mix it well. Cover it with lid and let it cook in medium heat for 10-15 minutes. Stir it every other 5 mins.

10) The consistency of gravy should come like this until then cook in medium heat. The gravy should be thick in consistency. Don't add water or pressure cook the gravy, it will change the taste of the biryani.

11) Heat water in a wide vessel until it comes to full boil. Once it boils you will be adding rice. Now add the soaked rice into the boiling  water.And set the timer for 6 minutes. let the rice cook in high heat for at least 6 minutes.

12) Check to see if the rice is cooked about 70%. Make sure the rice isn't fully cooked. You can check it by smushing a few grains b/w your fingers. Now carefully transfer the rice into a strainer. Make sure you don't break the rice.

13) Grease the aluminum pan with butter or ghee. Make sure you grease the bottom and the sides. Mix food color with 2-3 tbsp of rice. This will give nice color to the final biryani.

14) Now layer the rice and gravy into the aluminum pan. Layer it with rice in the bottom and the gravy in the middle. You can also do multiple layers.

15) Now preheat the oven to 350F. Cook it in the oven for 30 minutes. Cover it tightly with aluminum foil. Cook the biryani in the oven for 30 minutes. After 30 mins remove it form the oven. Mix the rice and gravy gently. Here is the delicious Mutton Dum Biryani.
