Dalia Upma

How to make Dalia Upma

Ingredients:


1 Bowl of dalia (broken wheat)
1/2 bowl of carrot finely chopped
1 medium sized tomato finely chopped
1 medium sized onion finely chopped
1/2 bowl of green peas
1/4 tsp of haldi (tumeric powder)
1 tsp of dhaniya powder (Coriander powder)
Salt to taste
1/2 tsp of red chilli powder
1/2 tsp of mustard seeds
3 tbsp of vegetable oil
2-1/2 bowl of water 1 inch pieces if ginger
2 green chillies finely chopped
8-10 curry leaves
Few coriader leaves, finely chopped

Method :


1. Heat the kadai/deep frying pan. Heat 3 tbsp oil.
2. Add the mustard seeds.
3. Add 1 inch piece of ginger finely chopped.
3. Add the 2 green chillies finely chopped.
4. Add -10 curry leaves.
5. Add the finely chopped onions and stir well.
6. Once the onions turn translucent, add the chopped.
7. Add the green peas.
8. Add the chopped potatoes and stir well.
9. Add 1/4 tsp turmeric powder.
10. Add 1/2 tsp of red chilli powder.
11. Add 1 tsp of dhaniya powder (coriader powdrer)
12. some salt for the vegetable stir well.
13. Add the chopped tomatoes.
14. Stir well for a few minutes.
15. Add the dalia (broken wheat).
16. Mix it well with the vegetables.
17. Boil 2- 1/2 bowls of water.
18. Add the boiling water into yhe kadai/deep frying pan.
19. Add salt as per taste for daliya.
20. Add few coriander leaves and mix weell.

Tips :

1. Ratio ofdalia to water should always be 1:2-1/2.
2. Additing boil water helps the vegetables to cook quicker and doesn't let the dalia get sticky.
3. Once the water is completely absorbed cover the kadai/deep frying fry with a lid and let it cook for 3-4 min., on a low flame.

Wheat Upma

How to make Broken Wheat Upma

Ingredients:


1/2 broken wheat (dalia)
2 tsp oil
1/4 tsp mustard seeds (rai /sarson)
2 tsp finely chopped green chillies
1/2 cup chopped onions
1/2 tsp grated ginger (adrak)
1/4 cup greeen peas
1/4 cup chopped carrots
salt to taste

Method :

1. Clean and wash the broken wheat thorughly. Par boil the broken wheat in 2 cups of hot water for 3 to 4 minutes. Drain and keep aside.

2. Heat the oil in a pressure cokker, and add the mustard seeds.

3. When the seeds cracle, Add the green chillies and saute on a medium flame for a few seconds .
4. Add the onions and ginger, mix well and saute on a medium flame for 1 to 2 minutes.
5. Add the green peas and carrots, mix well and saute on a mediume  flame for 1 to 2 minutes.
6. Add this broken wheats, salt and 1-1/4 cups of water, mix well and pressure cook for 2 whisteles.
7. Allow the steam to scape before opening the lid.
8. Serve immediately granished with coriander.

How to make Daliya Idli

How to make Daliya Idli 

Ingredients:

 To make 4 to 6 adlis: 1 cup porridge, 1/2 unsweetened curd, 1 small Onion (Finely chpped).
1 Tbsp Carrot (Finely chopped), 1 tbsp Capsicum (finely chopped), 1 tbsp peas.
1/2 tsp Mustard seeds, 1 Tbsp Oil 1/4 Tbsp White salt, 
1/24 cup water.

Method :


1. Heat oil in medium flame in a pan.
2. In hot oil, add mastard seeds and roat for 5 second.
3. Add chopped onion and roast until it becomes pink in color.
4. Onion has turred pink. Now add carrot, peas, capsicum and salt. Mix well and let it cook on medium flame.
5. Let it cook for 2 minutes to soften the vegetable.
6. After 2 min., switch off the stove and transfer the vegetables in a bowl.
7. Add porridge and curd in the bowl with vegetables. Mix well.
8. Add 1/4 cup of water. Mix well. Cover the lid and keep it a side for 10 minutes.
9. After 10 min., we can steam the mixture to make idli. Now grease the idli stand with oil.
10. Now add the idli mixture in greased idli holes.
11. For steaming idli, Add 500ml of water in pressure cooker. Add idli stand and steam it on medium flame.
12. Cover the cooker with its lid. Do remember to remove the whistel/weight. The lid is meant to only to cover the lover bowl.
13. Let it cook on medium flame for 20 minutes.
14. After 20 min., switch off the stove. Idli jas been steamed properly.
15. Carefully pull out the idli stand from cook and transfer idli's to a serving plate.
16. Here is our hot vegetable daliya idli ready to serve.
17. Serve it with Gren chutney or Sauce.

Chicken Biryani

How to make Chicken Biryani

Ingredients :

For Marination of chicken :

600 - 650g Full Broiler chicken without Liver and Gizzard. 
Cleaned and Hygienically Dressed without Head and Claws.
1/2 cup curd
2 teaspoons Ginger Garlic paste (Adrakh lehsun paste)
2 teablespoons Red chilli powder (Lal Mirch powder)
2 teaspoons biryani masala
Salt - As per taste
2 - 3 teaspoons Lemon juice
1/4 cup of Golden Brown Frird Onion slices

For Preparation of rice :

400g Rice - Basmati
2 Litreas Water
Small Muslin cloth
2 Bay Leaves (Tej Patta)
@ Green Cardamom (Badii Kali Elaichi)
4 Cloves (Laung)
8 Black Peppercorn (Sabut Kali Mirch)
1 inch Cinnamon Bark (Dalchini)

For Cooking Chicken :

2 tablespoons of Cooking Oil
Marinated Pieces of Chicken

For Arranging the Briyani Layers :

Cooked Chicken
Parboiled Rice
1/2 cup of Golden Brown Fried Onion  Slices
100 grams Butter - melted
1/2 cup milk (luke warm)
2-3 drops Food color - Orange
1 inch Ginger - julienned (cut into long thin strips)
1 teaspoon Garam masala powder
2 teaspoons kewra jal
1/4 cup Mint Leaves (Pudiney ke patte)
1/4 cup Coriander leaves (Hara Dhania) - chopped
6 Green Chillies (Hari Mirch) - cut from center in two long strips
Food Wrapping Aluminium Foil

Method :

1) Mix all ingredients.Poke chicken pieces. Rub the marinade on all sides of chicken pieces. Cover & Refrigerate for 30 minutes to 1 hour.

2) Use good quality Basmati rice. Add 1 tsp salt to water & boil it. Dip the Bag in Boiling Water to extract the flavors of all the spices.

3) Remove the Rice form heat when these are 3/4 done. Drain the water and keep aside.

4) Cook the Marinated Chicken pieces on Slow Flame. Stir regularly. Turn the pieces on all sides for even cooking. 

5) Layer the cooked Chicken  pieces on the bottom of the pan. Don't Layer Rice on the bottom most Layer,as. Then Cover the Chicken pieces with a layer of Rice.

6) Add some fried Onions, mint leaves, Green chillies, Garam masala, coriander leaves, Melted Butter, 3-4 tsp Milk, 1 tsp Kewra water and few drops of Food color over the layer of Rice.

7) Arrange another layer of the cooked Chicken pieces on top of the layer of Rice.

8) Arrange a layer of Rice on top of the Layer on top of the Layer of the cooked pieces of Chicken.

9) Add some fried Onions, mint leaves, Green chillies, Garam masala, coriander leaves, Melted Butter, 3-4 tsp Milk, 1 tsp Kewra water and few drops of Food color over the.  

10) Cover tightly with an Aluminium food foil. Cover the pan with a lid. Cook on a very slow Flame/Heat for approx 30 minutes.


11) The Chicken Biryani is now.

Dosa Batter

How to make Dosa Batter

Ingredients:

2-3/4 cups parboiled rice, soaked for 4-5 hours
1 cup split skilness black gram (urad dal), soaked for -5 hours
1/4 cup short grained raw rice, soaked for 4-5 hours
1 teaspoon fenugreek seeds, soaked
Salt to tste

Method :

1.Combine parboiled rice, black gram, raw rice and  fenugreek seeds in a grinder jar. Grind well into a      smooth and thick batter using water as required, little by littile.
2. Trancsfer batter into a bowl and set aside to ferment for 8 hours.
3. Add salt, mox well and use as required.
